I have a WE LE Red Mtn Cab/Merlot I am working on. I added the Chitosan a week ago today. I am going to be out of town for about a week and was wondering if I could go ahead and rack into a new carboy for bulk aging. I don't want to risk this one sitting around with the extra headspace it has already. Will this mess up the clearing?

I would not rack unless it is clear. I would find an inexpensive bottle of Cab or Merlot and top up before you go out of town and just leave it to clear while you are away.
