Folks,

You might want to Google ML01 yeast, it's a genetically modified yeast strain that accomplishes fermentation and MLF at the same time.

Thanks, but no thanks for me on the ML01. It has been around fdr a short while and I will not use it. I beleieve each organism has it's own genetic makeup and pathway of evolution. I won't knowingly use products that have had that path altered to suit an individuals needs. Ideally, it sounds like a yeast for malic acid conversion would be great, but I will continue to use regular yeast and them the proper MLF innoculum.


I isn't my intention to lecture anyone on this matter and I don't. I am just expressing my feelings on this matter.

I do not thinnk that I will use it either. However I will keep my eye on it.
