I’ve now done wine from kit, grocery store grapes, and concentrate. I want to move on the fresh wine grapes.

there is a place near me that once a year caters to DIY and sells grapes in larger quantities but below commercial.

I’d like to buy quite a lot but use them over time. Can I freeze them? Or is that just going to miss the whole point of using fruit?
 
There is an argument to be made to just make one mega batch. Generally, it is easier to do one large one than several smaller ones. However, I sense that perhaps you have something else in mind, like trying different batches with different adjuncts or yeasts?
 
You can definitely do that if you like. My suggestion would be to crush / destem the whole batch, package what you’d like to freeze in containers like 5 gallon buckets (or whatever size / vessels suit you) for later use. Later, just thaw, pitch yeast, and enjoy the ride......
