jalapeno wine, what do I do with the jalapenos?

I'm making a jalapeno wine, using frozen apple concentrate as the base, what do I do with the jalapenos? Put them in fresh? Fresh and mix a peptic enzyme into the juice? cook them first?

Fresh.
do not cook them.
i sliced them and added them to a mesh bag in the juice.
added campden tablets.
waited 24 hrs.
added pectic enzyme.
waited 24-48 hrs.
added all other ingredients (sugar, nutrient, etc.) then yeast.

i will post a recipe in a little while.

I agree with above, but I slice and freeze mine to break them down a little better.
