but cant seem to find any on when to do acid testing/ adjusting.




Naturally i adjust acidity before fermentation because i think i read it in jack kellars notes somewhere.
But my concern is after fermentation, srabilizing and clarifying,


Do i adjust acid before or after back sweetning. In my mind after back sweetning but im not sure.
Advice please???
 
Adjusting acid before fermentation will ensure a good fermentation. Readjusting afterwards really depends on what and how much you are adding to back sweeten with. If you are just using a simple syrup then it really makes no difference. If you are using a lot of acidic juice then you better do it after sweetening. Most of the time though you wont be adding mush acid by back sweetening.
