You should have added in the k-meta prior to adding the pectic in. So you should be safe - i wouldn't recommend waiting longer than 24 hours though.

Now , it's time to add sugar and then the Starter , But it's too late here and others are sleeping . That's why I should wait till tomorrow morning . I'm keeping the Must below 68F .
