Hi there !

If you have to wait longer than 12 Hours after adding Pectinase to the Must , how would you keep the Must safe ?!

Should I add SO2 again ?

Wait longer than 12 hours for what? Adding the yeast?

You should have added in the k-meta prior to adding the pectic in.

So you should be safe - i wouldn't recommend waiting longer than 24 hours though.

I've already added K-Meta 12 Hours before adding the Pectic Enzyme .

Now , it's time to add sugar and then the Starter , But it's too late here and others are sleeping .

That's why I should wait till tomorrow morning .

I'm keeping the Must below 68F .
