I know i'm from Scotland & ment to have deep pockets & new to the game but just wondering what do people do with the left overs after they have got all they need out of the fruit e.g. Saltana's, Orange peel rind, Ginger etc as i usually make fruit cakes with my left overs & they taste the same if i had used the fruit straight out of the packet.
I have just made Ginger/Orange/Lemon wine (but had some fresh rasberry juice in the freezer & also added that) so out of a packet of Saltanas etc i have a wine & 2 fruit cakes.
Please dont laugh at me i'm very sensitive :)

I'm not laughing but you are making me hungry. Now you have to post up your fruit cake recipe in the recipe section!
 
Next door neighbors compost pile as I dont have a garden due to not much sunlight in my yard. :(
 
Is the Recipe section not just for wines as thats all i can see on it, dont want to get into trouble :(

Pre heat oven to 180*c / 350*f / gas 4

Ingredients:
3/4 pt / 375 mls Tea
12oz / 350g Mixed dried fruit
7oz / 200g Brown sugar
10oz / 275g Self raising flour
1 Egg
1 Tsp Baking powder

Method: -
Put tea, sugar & fruit in a bowl to soak overnight
Grease & line 8" cake tin or 2lb loaf tin with gease proof paper
mix in the flour, baking powder & egg
(it will look more like a batter than a dough)

pour into the tin
cook in the centre oven for 3/4 of an hour
turn out & remove paper

Hope you like, will also do a stollen cake nearer the time for Christmas with the fruit but there is Almonds, cream, Marzipan & a tot of Rum in this recipe
