Since I've made the 3 kits I've bought, I figure its time to try some fresh juice. Living near the Finger Lakes in NY, I should be able to get some very good juices. I'm looking for some good resources on the whole process. I'm not going to buy and crush grapes or anything, just the juice from the winery but I need some good basics on adjusting brix, ph, acid, etc. Can anyone suggest some good reading? I've seen several books, but half of them relate to growing grapes and while I would like to do that someday, its not what I'm looking for right now. Thanks!!
 
Most of the books that deal with adjusting all that will also deal with the growing as that is job 1. Most likely you will have to buy 1 of those and just skip that part. Try checking your library.
