I have an abundance of fresh peaches available and I'm thinking of freezing enough to make another batch this winter. Do I need to do anything other than remove the stones?

Maybe just wash them and clean them with k-meta now so that you can just throw right in primary and dump boiling water right on them when ready to start batch.

I just remove the stone, quarter them, or slice them up into wedges and in the freezer they went. I think they'll be OK. Mine have been in the freezer for a year now and they are still very good.

Thanks gentlemen!! As usual, you are most helpful!

Like Wade, I usually sulfite the fruit I freeze. I have a spray bottle and just spray the fruit as I fill one gallon bags. Just remember that when you thaw and prepare the must, do not add more sulfites; otherwise the fermentation may not start or may be delayed for a significant time until the SO2 dissipates.
