I am at the point of racking after stablization and clearing. The chardonnay cleared really nicely. I added some oak that I had bought...Hungarian oak cubes. I added about 1.5 ounces. Is that too much? I also wondered if you're supposed to soak the cubes in some metabisulphite before adding...
