Was given a couple bags of dried and vac packed elderberries and I was just about to put on some riesling based liebraumilch white wine. What do you all think about that? I'm aware of using elderberries either on their own as a wine or in some red wines as a flavoring additive but haven't seen anything about using them in a white wine. Just a thought.

I have not used dried elders, but have used many fresh ones. They are very strong tasting little berries. They have lots of flavor and I believe they will probably take over as the taste in your wine. Just my opinion. Arne.

I also believe the dried elderberries will overcome the sweetness and flavor o the white wine. they will also add a lot of tannin. However to prove it to yourself just put some in a bottle of the wine. taste periodically and see if you like what is happening.
