First ever wine im making has a pack of crushed grapes included.

The instructions say to sanatize the bag and place it in a bowl, which makes sense for easier filling.

next it says to drop the bag right in, which also makes sense.

What it leaves out is do I add the liquid left over in the bowl also or just the strainer bag with the skins?

I figure add it all, but don't want any unwanted flavors

Yes, absolutely add any run off. That is loaded with flavors and body for the wine in the form of dissolved solids.

Also, when you top up to 23l, leave a little water out so that you can rinse out the plastic skins bag with it and add that to the juice too. The skins are very sticky so it can be hard to get them all out. Soak the plastic bag in warm water for a while first and that will loosen them up and make it easier to squeeze them out. Then rinse out the plastic bag and add that juice.
