So there was a bit of an accident when transfering the wine to the demijohn, it wasn't the right size and got dropped in, so we've ended up using a old cork as a temporary solution. It's not got an airlock or any holes in it, but the cork should let it breath enough right?

Well if you're expecting (or not) any pressures from ferment or residuals, hang around to catch your cork.!!! Do not expect any kind of breathing thru the cork... After all, we seal our bottles with them right!!!

If you still have some fermentation and no alternative, rather than seal it with a cork place a balloon over the mouth. It holds the CO2 and will protect the wine from O2 if it is present. Vent as needed.
