Hello...I just started my Amarone this morning and had a question. Per the instructions, I added the grape pack (what a pain getting out of the bladder) and started everything going. My question is, if you're adding the fruit in the primary, why wait to secondary to add the enzyme? I'm assuming (dangerous) that the package of enzyme is pectic enzyme so I would have assumed (there I go again) that you would add it to the primary to help break down the fruit pack.
 
to mu understanding, the enzyme is to avoid a "possible" protein ring that may form around the carboy. This is added in secondary and some people add it and some dont.

I added mine to the Argentina Malbec to have piece of mind.
