Hi,
Has anyone tried to make carob wine and could share a recipe?
I found a recipe in Jack Keller's website but they say it was never actually tried.

I am giving it a try. I don't have a recipe. I don't have a hydrometer but I'm going to try anyway.

Boil a mixture of 500g dates, 250g dried figs, 1kg of carob , 600g sugar and juice and zest of 1 lemon in 2 liters water for 25 minutes to make a sweet syrop, strain the solids then add boiling water to increase the liquid volume to 4 liters. when the liquid cools , crate 10g of fresh ginger and into the primary fermenter. Add 2 handfuls of raisins. Add wine yeast.
