I just started a CC Pinot Noir kit last weekend. It's cooking along nicely but I was just wondering if anyone else has made this kit. I did a search and came up empty. I'm considering adding a little extra oak. The little they supply with the kit doesn't seem like enough. Anyone have any experience with this kit??
 
Sorry, I have not made this kit. Have you made other kits that didn't measure up to your taste for oak? I usually make the kit according to directions the first time through. Another possibility would be to wait until you have stabilized. You could taste it, see if you like the oak. If not, you could add some at that point.

I would let it ride as is and then when ready to bulk age taste it and add oak cubes or spirals at that point if needed.
 
I made this last April and its still bulk aging. I was not going to add more oak because I like the typical style of light oaking of Pinots. Sampling time is coming soon.
 
I wouldn't want to over oak a Pinot so I'll probably wait it out and add later as suggested. Good advice. The CC kits always seem to come with too little oak and are always too low in ABV for my taste. I usually hold back some water when making the kits. I did this one to finish out at about 12% which should be good for a Pinot. I did a CC merlot kit with a friend of mine and when we added the water as directed, we wound up having to add sugar or it would have only been around 10%. We asked the dealer about it and he said they do that on purpose so the wine will appeal to a broader range of drinkers. I can't imagine a Merlot with 10% ABV not tasting a little weak in the knees so we adjusted it up and it came out great. Looking forward to hearing how your Pinot kit comes out. I'm about ready to go to secondary. Love the smell of wine cooking.....
