Hopefully the country wine experts can help me out.


I have 13 pounds of blueberries in the freezer, and now I have some empty equipment. From the recipes I have received this may be a little too much for a 3 gal batch but not enough for a 5 or 6 gallon batch. It would seem to me it would make a really tasty 3 gal batch.


Any opinions
 
A 3 gallon batch would have a real nice flavor.....Do you have any gallon jugs??? You can make any size batch you want.
 
sound to me likeway way more than you would find in a vintners harvest can. I would try the 5 gallon batch without hesitation.

I have done blueberry before with 4 pounds per gallon and it turned out Berry nice. So 3 gallons with 13 pounds is close to that. Of course I have done it with 2.5 pounds per gallon and it was tasty enough, so you could make either a 3 or 5 gallon batch with good results.

The country wines are fun. I did a strawberry and added more than the recipe and the taste is really good. I know there is probably a limit but adding extra would probably add a better taste. I think the 3 gal carboy is coming off the shelf.

I added 3 cans of frozen red grape juice concentrate to the recipe and it worked wonderfully. It did not take away from the flavor of the blueberries and this wine is now one the favorites of my guests that sample it.

Welch's makes a frozen red grape concentrate???? I haven't seen that around here ...It sure would be nice to use as I don't want the Concord flavor in my fruit wines. Tho...it may not be bad mixed with some fruits....just scared it might overpower some of them.
 
I was saying the same thing NW as I was reading this post. No grocery stores carry them here. They carry a lot of other useless types for wine making, but no just plain red grape juice, or grape juice.

Wish they would.
 
I,d start with 3gallon batch and make it rich with flavor fruit forward,concept,then take the balance and make a port//
 
I use 15lbs of blueberries for 6 gallons and 10lbs of sugar for a 10% abv just started a new batch the other day, its boiling out of the airlock right now, I put it on medium toast oak cubes for 2 months after its stablized and everyone loves it. Make sure you use yeast energizer and nutrient to help the yeast get going, I use lavin 1118.
 
I've used the Welch's Niagra frozen grape concentrate in blueberry wine to add more body and it turned out great. I've also used that to sweeten blueberry wine after fermentation (with sorbate of course).
 
I see Welch's has Purple-Concord, White Niagara and Red-? in 64oz bottles...anyone ever used that red in any wine??? Wish we had the red in frozen form.

<DIV =lm_tip id=lm_tip10 =lm_div_mouseOver(); =lm_div_mouseOut();> I can't speak for other parts of the country, but I found the red grape conc. at the local grocery here in S.C., it didn't overpower the taste of the blueberries at all.
 
Generally the higher ratio of fruit per gal will intensify the fruit flavor of the wine but if you want to stretch it to a five gal. batch consider adding some Welches or Langer Blueberry juice. Welches will be mixed with white grape juice which will only help your wine but Langer makes a Blueberry juice. These can be found in your local grocery store and comes in 32 oz and 64 oz. plastic bottles. Either work great. I've used both. I'm getting ready to make a Pomegranate/blueberry wine myself with these products. I will post my recipe when I make it probably tonite.

There is also such thing as oo much fruit to as it will be to acidic and unbalanced.
