What is apple cider acidity level supposed to be at? Mine is 62.5% tartaric acid/4.0 ppt sulfuric. Tested with titration acid. I know fruit wines are supposed to be at 55%-65% would this be a fruit wine?...

I don't pretend to be an expert but apples - I think- contain significant amounts of malic compared to tartaric. I don't have Jolicouer's book handy but if memory serves me (and it often does not) he suggests that you need to account for the malic rather than the tartaric but I don't recall offhand whether you need to discount for malic when you measure tartaric or you need to add some factor.
