Just wondering is it better to let the wine splash when racking from one carboy to another or should it run down the inside ?
 
Best to siphon it with plastic tubing and let the new carboy fill from the bottom in order to minimize oxygen exposure. Only time to use splash racking is when trying to get rid of odors, and after that immediately put in some K-meta.
 
Splash raking can release CO2, so its not all bad. Be sure to add K-meta immediatly after racking.
 
I agree with DoctorCAD, you really are not exposing your wine for that long and it does release co2.
 
When I take it off of the gross lees after pressing I always splash rack. After that I try to minimize oxygenation. If I have an offer odor at any time though I will splash rack.

For kits I would suggest it once if you do not have a clean nose products have any off odors. Like said before, be sure to add k meta in conjunction with splashing.
