I filter all

my wines now on third racking so that I can bulk age and not have to
worry about racking off any more sediment. I play the wines a little
Vivaldi (Four Seasons), and I bent the handle so as that I can get
every nook and cranny in the carboys. The gravity filter takes a while
to do 6 gallons (about 45 minutes) but the wait is worth it. It also
helps me learn more patience.
 
They are beautiful, Wade!!! My Symphony has already stated to clear and I've only racked it once. Mine was low when I did rack it but not as low as yours. I will have to remember to hold back a 5 gallon carboy so I will have it if I need it. Isn't the Symphony delicious??? I already love it!
 
I'm wondering...I have the F-pack left over from when I made bubbly from the Riesling. How do you think that would be if I topped up the Symphony with that?
 
I think it would be pretty good as I will back sweeten mine some most likely.

Wally, its the W.E. IM Watermelon White Merlot and it has a lot of
flavor which I wasnt sure it was going to since Watermelons arent a
strong fruit and I brought the SG up to 1.080. Ive only had just a
smidgen of a sip so thats all I can tell you It does have its own color
that is a little different from any other batch Ive done before though.
