    The man has a pink kind that is pear shaped, he says it makes an awsome wine. I think it was Ison I used last year for 10 gal.. Then I used wild ones for another 10 gal.I never have mixed different types, I guess I should give it a try. ChrisEdited by: greenbean

    Looks like the color is going to be real nice. I hope it taste better than mine. I would liken mine to peeing in a bottle and letting it set in the sun for a month, not what you would call good. Maybe next time. Chris

    Degassing fruit wines

    If they are setting on sediment go ahead and rack again. Then then stabilize and sweaten ,and bottle. After that forget them for about a year if you can. They will get better. Chris

    I'm not too crazy about the flavor you get when you leave the berries in the must too long. About 2 days is the most I leave them in. The seeds seem to give it an off taste like the stems do. Maybe it is just my taste buds though. Chris

    Maui, To me Elderberry is an aquired taste. I think it is ok while my wife hates it. So go slow and taste alot. Chris

    Bottled Last Night

    I use Sharpie Markers.They wont rub or sweat off. You have to use an SOS pad to remove the writing. Also now they have a bunch of new colors to choose from. Chris

    While I was a Mount Bethal,I ask how did they get all of their elderberries destemed. ( They use 90% wild berries.) The lady told me that she and her husband cut the whole berry heads and put them in a paper sack and freeze them for 3 days. Then while the berries are still frozen they just dust...

    Bottled Last Night

    Last night I bottled Full Bodied Blackberry,Light Bodied Blackberry,Blueberry Sherry,Rose Wine and Dry Riesling.The bottles were cold so they kept sweating but I think the pics came out OK. Chris
