Just racked it for the beginning of the bulk aging phase. Had a hint of cherry in mine, could use a bit more oak, but overall quite pleasing. Any thoughts on it guys and gals?

On a different subject.. I cracked the first EP super tuscan tonight after 5 months aging... wowzers. Ive been drinking wine for 3 years now, almost all red. The first 1.5 years i bought wine and then moved into the wine making. If this wine isnt the best tasting wine I've ever had its top 3...
Great thread. I personally am biased to RJ spagnols EP kits. It was funny, i did the WE australian shiraz kit and thought it tasted better at about 3 months then at about 7. Either way tho, I ordered two LE's from WE for this december so I will see what happens then. As of now i have done an RJS...
Sounds good i think 18 to 24 months is do-able.

If you have the right quality cork, should it not be good for much longer than 5 years?

I bottled mine after 3 months bulk aging... and opened on last night after 2 more months in the bottle. I must say Im very pleased with this wine.. certainly equates to beyond a 15 dollar bottle wine in my eyes. Smooth as butter, thick tannins and a deep layer of oak...
I just bottled the EP super tuscan after 3 months bulk aging... very nice! Cant wait to crack a bottle in another 6 months or so. It was smooth and had some really fruit forward tastes too it. Cant wait till the oak melds into the mix a little smoother.
