What if I made a dry wine with Welches white grape concentrate then back sweetened with the Welches Strawberry Breeze concentrate?


Would it make a sweet "blush" type of wine or would the strawberry over-power the flavor and be too much?


When sweetening this type of wine doyou do it to taste or just bring it back up to a specific gravity?


Would "Cotes Des Blanc" be a good choice for the yeast (sweet wine)?


Just looking for an experiment to fill a 3 gal carboy!!!

You would have a blush color for sure and the flavor would be very strawberry-like. I've always sweetened to taste rather than SG, but in making my welch's peach, I sweetened to taste and took an SG reading in order to duplicate the next batch.


The Cotes des Blanc yeast is a good choice, but it is temperature sensitive (64-86 deg). It is on the low end of the alcohol scale for Red Star yeasts and provided you start with enough sugar will leave some residual sugar.
