Just sampled this wine after about 8 months of bulk aging. I just racked it off of the small amount of sediment at the bottom of the carboy. Going to mix in 1/4 tsp of k-meta, and transfer to another carboy in about a month, just before I bottle it.
This wine tastes excellent! Right up there with a decent quality $15 bottle of pinot from the store.
