This kit comes with EC1118, and I was wondering if any of you have swapped this out with a different yeast, and had good results. If so, which yeast did you use?

There appears to both a Red and a White called Winemaker's Trio. RC-212 would probably be a decent choice for a red, but not for a white.

I made 2 trio kits at the same time, and used , icd254 for one and icvd80 for the other then mixed together at the end. This is a good wine. I added extra oak and tannins. It's about a year old and I don't feel like it's ready yet...but could be bc I used lots of tannins. I also considered rockpileand assmanhausen yeasts but the two I used are thought to be complimentary so....
 
Thanks for the feedback. I went ahead and used the RC212, so I'll let you know how it goes.
