I know the recipe calls to add 64oz 1st then when SG his 1.050 to add the last 32oz. My question is why? What's the reason to wait to add the last bottle? Is it because when it's 1st started, that you don't want to acidic of an environment so the yeast can take off? If that's the reason, why not just start with 1 bottle to start then add the last two bottles when SG hits around 1.050? Why not start with 1 bottle, add then 2nd on day two, then add the last on day 3? Will the taste come out different if the directions aren't followed? Thanks!
