When racking is it 1/4 potassium mets per gallon?

When racking do you add 1/4 tsp potassium metsabilite per gallon or 1/4 tsp total (to 5 or 6 gallons) when racking juice, not kits? Do you stir vigorously the same way you do to the Wine Expert kits?

Also, does the same rate hold true for Potassium Sorbate? Do people only add Potassium Sorbate to whites?

Dissolve 1/4 tsp of K-meta in a little water or wine and add this to a 5gal batch and there's no need to stir vigorously. To a 1gal batch, add 1 camden tablet crushed.

Add 1/2tsp of K-sorbate per gal of wine if you plan to add sweetener so that refermentation won't take place. If the wine will be left unsweetened then this step is not necessary.
