What kind of water do most use to top off the fermenter.....


Spring, Distilled, Tap????

If the wine is finished the distilled is the best or boiled as the )2 is gone which will help protect it from oxidizing. If its just in the beginning phase then tap or spring water is the best as it has minerals and nutrients still in there that will help your fermentation along with 02 that is also needed. You really should not be using distilled water at this point, reverse osmosis is better then distilled bu still many minerals and nutrients are missing so make sure you add this to your recipe.
 
I dont top off with water. Rather, a like wine
 
I normally use a like wine. If I use water it is normally reverse osmosis water as well. The only reason I use RO water though is because I have an RO system. If I didn't have it I would use tap. At my last house I used spring water from the jug as my tap water was well water and it wasn't real good tasting water.
