I have a Winexpert Vintner's Reserve Sauvignon Blanc kit that I am going to start sometime soon. I am wondering if I should follow the instructions and ferment in a warm environment (71+), or ignore them and ferment in a cool environment (around 57-60). I've read that this type of wine is often fermented cool, but I'm wondering if maybe I should just be following instructions with this type of kit. Either way is easy enough for me, since I'm brewing with a friend and we can either put it in his warm apartment or my cold basement.
