Varietal labeling

Q for the pros out there. I have been researching out some small boutique wineries and I am pretty sure a few are making there wines that they sell from juice and also kits, the high end ones. Most of there labels are with the varietal and I know a few they change slightly. If you are say making wine from these high end kits ie cellar craft showcase that say on their box varietal 100% zinfandel can you put that on your bottle label then?

Here in NY and some other states a varietal only has to be over 75% the varietal and you can use juice, but, it has to be all from New York State. That makes it harder to do a lot of vinifera and is part of the reason I use only cold climate varietals.
