The kit pinot I started about a month ago has been ferrmented, and I did the chito/kiel fining treatment. Lo and behold, it's pretty clear, and I have to say, not unpleasant at this point. Nothing special, but it is only about a month old, I'm hoping it will improve with age.
I guess its time to rack off into a 5 gal, use a plain bung, no airlock, and let age a while.
If I have too much for the 5gal, I may keep some for drinking now. After all, the cider is almost gone...
