Doing our first wine kit, i saw the instructions were strict on the juice temp being 72-75 would it be bad it if was higher closer to 80 or should i just wait to add yeast till its down to 72-75, our AC went out so its boiling in here and the juice temp doesnt want to drop.
 
Skor, if you are doing a red wine, closer to 80 degrees F is actually better. I like to do my whites in the range of 72-75 F and reds 75-80 F. You will be fine.
