Iv'e got some concord grape wine that is three months old and has a tart and tannin taste. the wine is done fermenting, will this go away in time or is there something I should do like refrigerate for three weeks? It smells great ,clear, but taste-----not to good.

Tannins will settle during aging.
If that is what you are looking for it will take
some years.

You can try fining with egg-white which will remove
some tannin.

Tartness can be settled by cold-stabilising.
Meaning put the wine out in the cold and wait until you
see some sediment forming.
Then rack the wine of the formed tartaric crystals.

I am going to sweeten the wine some. I think I'll refrigerate it first then, and go from there. I still have a lot of time.I've got three other batches of different wine going also but there from kits not fresh fruit. Thank You Wade and Luc.
