We are getting great strawberries from our bed. About 25 lbs. yesterday and there are loads more that are not ready to pick. I started a 2 gallon batch of simple strawberry wine last Wednesday and followed the directions to crush the strawberries and pour boiling water over them.
I have been stirring daily as the directions say to do. There is a lot of strawberry pieces (now turning white) that float on top.
Should I skim these peices out or leave them in and try to keep them out when I transfer to the secondary?
Also, my starting gravity was 1.110. Is this too high?
