I am new to wine making(this will be my third time) so keep it simple!!
This works well I do almost the same I just use different yeast. I like to use 7A-1122. It seems to hold fruity taste wellMy recipe..
30-35# of fresh or frozen strawberry
Sugar to 1.085
Cote des Blancs
Acid blend.. do a TA test and adjust
2 paint straining bags
2 fermenting buckets
add 5# more for a f-pac and backsweeten after wine went dry and after you add meta and sorbate
