So after I get off work at one in the morning, I look forward to having to rack and finalize 5gal of carrot wine and 6gal of Skeeter Pee, :db. I don't have any real degassing equipment, can I achieve the same effect by splash racking to disperse the CO2 or will the resulting oxygenation potentially ruin these batches?

I normally set the tubing so that it's high in the carboy and touching the side so that the wine is spread out down the side as I rack and haven't had a problem so far with this sheet racking method. This allows more of the gas to diperse as the wine flows down. :D

Splash racking is a well used tool in the winemakers toolkit.

The CO2 that is being driven off will keep the wine from oxidizing during the operation.
