Fall 2012 I made a batch of apple wine that I dumped a bag of brachs cinnamon candies into the carboy. The wine came out very clear with a rose blush and a nice cinnamon aftertaste. During a very hot week my crawlspace warmed enough that 7 bottles popped their corks. I found a bottle or two since then that was bubbly. My nephew & his wife came over to exchange presents tonite. She wasn't thirsty but when I opened a bottle of said wine it "popped". I poured her a glass and when she saw all the bubbles she was hooked. She said it was the best fruit wine she has ever tasted. Had to go fetch another bottle. Thankfully this one was normal otherwise we might still be sampling. Anybody have an idea why some bottles were stable and others active? All came out of the same 6 gallon carboy.
