I am getting ready to stabilize and clear a syrah and cab sav. These are not going to be sweetened at all.
Do I need to add sorbate?
I am thinking no.
Just k-meta.
 
You are correct. As long as your wine femented all the way to dry and you are not adding a flavor pack or back sweetening you do not need to add sorbate.
 
It's OK to be "different". What ever floats your boat as they say. :D
