Just racked to glass today. It smells great and likes like a muddy river after a flood.

Wade:
Is this a kit or are you setting up a "Solera" system? This was one of the topics covered in my class last Saturday. Apparently with time and patience you could actually setup a small two barrel system to make a truly blended sherry.


I'll be interested in how this turns out!
