Just harvested 100 lbs riesling and have run through crusher and destemmer. should i press the must now or wait, had yeast and punch down for few days? Wondered if this would add more of the fruitiness to it?

Unless you’re making an orange wine, the typical process is to crush/destem, press, settle, separate the clear juice, then ferment.
 
Yep, press right away. I picked and crushed, then pressed, 200lbs of Riesling last week. got 45L of juice.

It's been very cool here, so while I started at 1.08 sg on Tuesday, it's only down to 1.073 this evening.
