Receipe or hydrometer?!

My question is, every time I did a test with my hydrometer, every time I'm under the density mark, can I make a test, if density is reached....move on to the next step.?!?
So I could save a week...
 
I will depend on my hydrometer before a recipe but if it is a kit you would be best to follow the kit instructions.
 
Trying to do anything to save time is the last thing a wine maker should ever try to do. As Julie said, follow the instructions, otherwise, you could end up with corks popping out.
 
I always go light on dosage of sugar and adjust up with hydrometer. A lot of web recipes have very high starting sg's and no where near enough fruit!!!! As a rule of thumb you should have approx 6-8 lbs of fruit per gallon and a starting sg of around 1.085 for most fruits except grapes and with weaker fruits like strawberries or peaches and pears much much more then 8 lbs per gallon!
