I was wondering...

Can I rack as many times as I want before bottling?? I want to try to get as much sediment out before I bottle it.

Yep, just make sure you top it up each time.

Also make sure to keep proper S02 levels.

how would I make sure to keep the S02 level proper?? and what is it suppose to be.

Use a test kit to check it - such as the Accuvin test. You want to add a bit of K-meta if it has set a couple months and you rack it. 1/4 tsp per 5-6 gallon batch will do.
