Keller. His recipes are just right at 1 gallon, no extra, so that means you have no extra wine for topping off. I like to go a little over so I have some to top up and make up for racking losses.
EC Kraus. 18#/5 gallons is less fruit than Keller above. I personally would stay with more like 4#/gallon.
