Okay, I came home to a smelly wine cellar and discovered a cork in the
middle of the floor. I found out which bottle it came from and looked
over every bottle from that batch and from there looked over every
bottle in my cellar. I then looked over my notes and discovered that I
never stabilized the Plum wine before back sweetening!

It came out really nice though. I
opened a bottle and it is a rather nice sparkling wine. Some of the bottles
were only not exploded because of the shrink wraps but were bulging and
as soon as I took that off, Happy New Year!!!!!!!! Mental note, if youre going to write it down make sure that you do it!

I opened up 10 bottles and have them fermenting in 1 gallon jugs and we'll see if they come out ok after all is said and done.
 
Only lost 1 bottle. Hopefully i can save the other 9 and that it wont be too hot with the added abv.
 
Sounds like some cooking wine to me......

We have never made a plum wine we've liked....always end up cooking with it.

We'll have to get a bottle of our plum wine to you to see if you like it. I'm sure you'll age it a while...
