Hello everyone,


This is my first fromscratch recipe.


5.0 gallon Old Orchard pure black cherry juice
1 12 oz can Old Orchard Pomegranet/cherry concentrate
4.9 lbs granulated sugar
6 tsp yeast nutrient
1/2 tbs tannin
6 tsp pectic enzyme.
4 Squeezed Fresh lemons
5 12 oz cans Old Orchard Tart Cherries in water
Lalvin RC212 (Bourgovin) wine yeast
Starting gravity 1.100 on 5-6-2007
Finished gravity 1.006 on 5-18-2007


Yesterday I degassed and added the required potassium sorbate and potassium metabisulfite thinking the fementing had stopped after checking the SG for 2 consecutive days. This evening I noticed very small bubbles at the very top of the carboy neck where the liquid meets the glass. Could it be refermenting from stiring up the lees? Anything to be worried about?

Could still be gas but would check SG in 2 days to dble check that it
is stable still. What temp was it at when you degassed as 75* is the
best to degas.

The temp was 73* as I am in the Florida Keys. I have central a/c but keep the carboy in a tupperware with a few inches of water. I forgot to add that I had also put in the isinglass. With all6 kits I have done things move quick down here when it comes to fermenting.
