ok, all the persimmon recipes I've seen call for 3 quarts of water for every 3 lbs of fruit. I have 20 gallons of fruit, how much water do i add?
 
Can you weigh your fruit on a scale to see how much your have? Even a bathroom scale will work.
 
Generally you need about 4-5 lbs of fruit per gallon of wine plus some for sweetening afterwards.
