Making Adjustments along the way?

Yeah, I know - patience trumps all, but ...

Is adjusting along the way a common practice? Or do we wait 12-18 months and hope for the best?

For example, if I sample at the first or second racking and suspect the need for more bite, should I add a bit of tannin? Or is it too late?

This is just an example ...
 
Sometime there is a need to adjust. The longer you make wine the less adjustment because you know what works and what doesnt, Example: Was having trouble with a Lime Cooler I was allempting to make, girls, the acid turned out to high and It need adjustment.
 
I would wait till later to adjust tannin levels but acididty can be determined very early.
