I am currently making the WineXpert island mist pink lemonade and limeade. After 8 days I am racking for secondary fermentation, my SG is 0.992. The instructions say to wait 10 days for the SG to get below 0.996 before stabilizing and clearing. Am I ok to start the stabilizing and clearing now since the SG is below the desired number, or should I wait?

I would go ahead and rack, add sulfite and let the wine bulkage until the sediment drops out. Once that happens, I would rack again and depending on how long it has been add sulfite again and sorbate if you plan on adding some kind of sugar back to it.

Like Seth said, you are good to go. Just follow the instructions and it will turn out fine.
