I'm making WE Stag's Leap Merlot. Up to step 4- racking & clarification. Obviously I didn't plan ahead.. Instructions say use k-meta for ageing over 6 months. I don't have any k-meta, but I do have campden tablets. Can I use this instead? I have k-meta on order.. can I rack now then add k-meta when it arrives????

Yes you can add it later andactually best to add just before bottling especially if you bulk age for any length of time.
 
One other reason to wait:


You can use either potasium or sodium metabisulfite. However, the <B style="mso-bidi-font-weight: normal">sodium is not recommended as it introduces salt into the wine[/B] – results in some taste issues.
