Okay, I've fallen a little behind in minding my wines. I usually do the first rack within 7-10 days, but I have two batches now (fruit wines) that are around three weeks in (never racked over). I am planning to rack over this weekend, and I'm wondering if I should add K-Meta? I wouldn't normally add it at the first rack but now it's so far into the process I'm wondering if I need to for sterilization/avoiding oxidation...?
 
Only add the k-meta now if you are sure fermentation is done. If you add it before it is finished you will likely make it stall. I would test the SG first, then rack it. If done, add, if not finished get under airlock wait until finished and then add the k-meta.
 
Tahnks, Appleman - if it is not done fermenting, should I wait to rack over?
